Vinification Details: Alcoholic fermentation using selected yeasts in stainless steel tanks. Malolactic fermentation began 10 days after alcoholic fermentaion was complete. Aged on the lees for 6 months.
History: The Cistercian monks from the abbey of Pontigny began growing vines here in the 12th century. The AOC Chablis Premier Cru was officially created in January 1938, thus confirming the excellent qualities of this dry white wine which, has held onto its excellent reputation throughout history thanks to the exceptionally high quality of its raw material – the Chardonnay grape.
Regional Information: This area of appellation stretches across 5 000 hectares of which only 3 160 divided among 19 communes, are planted with vines. They grow on gentle slopes in the arable and sufficiently thick layers of soil. Kimmeridgian marl slopes soils.
