Vinification Details: The grapes are firstly crushed which allows the must to extract colour and tannin from the skins. Fermentation then occurs at temperatures between 22 – 25°, during which the skins are racked and returned to the liquid several times to extract flavour, structure and stability. The wine then undergoes malolactic fermentation, before being filtered and fined, and finally bottled.
History: Sicily is the third largest wine producer in Italy (the world’s largest wine producer). In recent decades the wine industry has improved, new winemakers are experimenting with less-known native varietals, and Sicilian wines have become better known and are internationally respected.
